Stick everything other than Skyrim in the bin. You'll have everything you'll ever need.

how difficult is it?.. im old and not the most savy of gamers.

Put it this way. They are both similar games.

If you like Dragons, Magic, swords and shields then go for Skyrim

If you like Guns, Mutants, Explosives or a launcher that shoots mini nukes then go for Fall Out 3

Ta.. think mutants beat dragons these days :)

Any recomendations for a levels game for my wife to play.. she likes mario bros style

Never played it myself but Little Big Planet's the go to platformer from the PS3 era.  There must be hundreds of copies going on ebay if it's not already amongst the 30 games you bought.

damn took that out to go for Skyrim

Fallout is Skyrim in the future... basically. Very similar games. Fallout is post-apocalyptic sci-finals with a 50s twist and Skyrim is fantasy in a Dragon infested Viking world. Skyrim is more fluid, Fallout more tactical.

I'd find it hard to choose between them; they will both draw you in and take hours to complete.
