But games (such as this) have been ruined by atrocious officiating for decades. So what's the difference?

Isn't there an element of judging it as serious foul play / excessive force though? I don't like Bamford but that was clearly accidental.

You either have VAR or you don't. There is no half way measure. Personally would just have goal line technology. Football in the Prem is too forensic. Over a whole season decisions tend to even themselves out. There are enough interruptions these days with time wasting and diving etc.
